Healthy aloe vera ice cream

There are still too many hot days left not to relax with something cool... From Aloe Vera Las Coronas we bring you a recipe for aloe vera ice cream perfect for refreshing yourself with something tasty and healthy. Although they are usually consumed mainly in summer, a homemade ice cream as original as this can also be served as a healthy dessert for your guests; you’re sure to be a hit.

The aloe vera will give you a different flavor than you’re used to and your ice cream will have a much stronger taste. Shall we start?

Ingredients:

250 ml of milk

250 ml of cream

125 g of sugar

3 eggs

2 aloe vera leaves and green food coloring. The coloring is optional.

Preparation:

First, separate the yolks and whites of the 3 eggs. Next, beat the egg whites until stiff peaks form and set aside. To make this easier, you can use an electric whisk. Now continue with the yolks: beat them together with the sugar until you get a smooth, lump-free texture. To this same mixture, add the cream and milk. Beat again very well until the ingredients are fully combined and refrigerate.

The next step is to peel the aloe vera leaves and blend them with an electric blender. If you want to remove the characteristic bitter taste of aloe vera, it is necessary to soak the leaf pulp in warm water for 24 hours, although the original recipe does not remove the aloin (the bitter substance in aloe vera).

Now it’s time to mix the egg whites, yolks, and aloe vera. You can add the food coloring at this step. Mix very well with a spoon.

Next, put the mixture in the freezer. After one hour, take it out and stir everything very well with a spoon, then freeze again for another hour. Repeat this process at least three times to achieve a creamy texture in the ice cream.
